Zucchini Mini Cakes

A neighbor came by with some zucchini, so I decided to try something different than your usual sauteed zucchini.
I made a  zucchini sheet cake and then use a biscuit cutter to cut out mini cakes.
I used my decorative cupcake papers to make it more presentable.
I stacked two layers and  made a cream cheese frosting.
I cannot taste the zucchini in this cake. It is moist and extra yummy with the cream cheese frosting.  It would even make a great coffee cake without the frosting. This cake is as yummy as my carrot cake.




Ingredients:
4 eggs
2 cups sugar
1 cup vegetable oil
2 cups all -purpose flour
2 teaspoons ground cinnamon
1 teaspoon salt
2 teaspoons baking powder
1 teaspoon baking soda
1 (8 oz) can  crushed pineapple- drained- save 2 Tablespoons
1 cup chopped walnuts or pecans
2 cups grated zucchini

Preheat oven to 350° .  Grease a 9x13 cake pan.
Sift together flour, cinnamon, salt, baking powder, and baking soda into a bowl.
In another large bowl, beat eggs and sugar until light colored.  Mix in oil.  Add sifted ingredients to egg mixture, and beat for 2 minutes.
Stir in pineapple, chopped nuts, vanilla and zucchini.  Mix thoroughly.  Pour batter into cake pan.  Bake for 80 minutes, or until done. You can also use a bundt cake pan.

Cream Cheese Frosting

1/4 cup of butter
1/2 pound powdered sugar
1 package cream cheese
1/2 teaspoon vanilla
2 Tablespoons crushed pineapple

Whip the butter and cream cheese together, add the vanilla and powdered sugar.....Blend thoroughly and then add the pineapple.

Here's the Zucchini cake balls.
 To make the cake balls, put the whole baked cake in a large zip lock bag, seal and squish it so it is all blended into crumbs.
Add the above cream cheese frosting into the zip lock bag with the cake and blend it so everything is absorbed.  Put the bag into the freezer to firm up..... About an hour.  Take the bag out and make small balls, and set on wax paper.  When finished, put the balls back into the freezer for another hour to firm up.

Melt some candy melts, your choice of color or chocolate chips in the microwave  for about 1 minute.  Take out and stir.  Make sure it's all melted.
Take the zucchini balls out of the freezer and start dipping and set on wax paper to harden.
I used yellow candy melts on half of them and I also used melted chocolate chips.  If you get sick of zucchini, try baking cakes with them.

  4. I love the idea! I have saved the recipe, as I want to try it! I also like the idea of the cream cheese frosting, as I don't eat butter, but I love cream cheese.

    It looks gorgeous and I'm sure it will taste as good as it looks!

  6. Sounds yummy! I had so many zucchini last year that I made ALL sorts of things trying not to waste any! (still have some in the freezer!)
