Sorry I did not have a post to share this past week. Between appointments and get ready for tonight's fiesta kept me busy. We are entertaining 8 of us for a Mexican dinner on the copper table off our Breakfast room.

Since one of our guests is a vegetarian, I am making vegetarian enchiladas plus Chicken fajitas, rice, pinto beans, street corn and two desserts.
