Life is Sweet!


I set up a Mackenzie Child's look with watermelon accents in our family room.
Black and white seems to go with all colors.







Watermelon is so refreshing.  A summer time treat.   Have you ever tried making Gazpacho soup with watermelon?

Chilled gazpacho hits the spot on a hot summer day- Recipe courtesy of Nugget Markett

Ingredients

  • 1 PureHeart mini seedless watermelon, diced
  • 1 cucumber, peeled
  • 1 small red bell pepper, chopped
  • ¼ red onion
  • 10 sprigs cilantro
  • 1 teaspoon balsamic vinegar
  • 2 teaspoons kosher salt
  • ½ cup extra virgin olive oil, divided

Preparation

In an non-reactive container, combine watermelon, cucumber, red bell pepper, red onion, cilantro sprigs, balsamic, salt and 2 tablespoons extra virgin olive oil.

Allow fruit and vegetables to macerate for at least 4 hours (up to overnight) in refrigerator.  

In a food processor, blend macerated mixture to desired consistency (can be made smooth, or process less for a chunkier soup). This can be done in batches, depending on the size of your food processor. Serve chilled with floating garnish of extra virgin olive oil.



How about watermelon popsicles?

I bought these cute watermelon cutters from Amazon.

It's been hot.  Some of you might have heard about the terrible fires in California.
The river  fire was about 30 minutes from us as we got an alert on our phones. It was started at a campground. It is pretty much contained now. I pray these terrible fires get stopped. So many people have suffered, in  addition to wildlife.  People have lost their homes. Such tragic news.

  6. Linda, love your MC display, is so pretty. I have not tried watermelon in my gazpacho but I'm sure I would love it! I try to keep watermelon in the refrigerator all summer long. Hope you are having a great week.....

  8. Love your buffet all decked out in MacKenzie Childs decor, so beautiful! And of course, I love all things watermelon for sure :) We have been having terrible fires here too. I'm glad they got the fire out that was close by you. It is a worrisome time of year for us here. We had a fire 3 miles away from us. Thankfully it is now fully contained. We had an amazing team of people working on it. Many blessings to you, and stay safe :)

  11. Love the display, Linda and I agree that black & white goes with everything. I am a huge watermelon fan but like seeded watermelons and they are harder to find now. The watermelon popsicles are such a great idea!

  15. Gorgeous display of your collection, Linda. I've not tried watermelon gazpacho but I know I would love it. The recipe reads pure deliciousness. I always think of you and other friends and family when reading and watching the news of these fires (and weather, in general). So glad that river fire was contained. It would be so traumatic to fear our homes being destroyed.
