Easy Chinese Chicken Stir-Fry

I am always wanting to cook easy and quick dinners. We love eating Chinese food.  I recently made a Chinese chicken stir-fry with oyster sauce.  That yummy sauce found in the Asian isle at your local grocery store.  I use oyster sauce for my egg rolls.

The easy way is to buy the vegetables already cut up and prepared.  They are fresh and you can speed up making dinner with prepared veggies.  You could also use frozen vegetables as well.

Feel free to try this with other meat and vegetables.  You can get creative.  I love the rich sauce with this dish.

Chinese Chicken Stir-Fry

Easy, yummy chinese stir-fry
prep time: 10 min cook time: 25 min total time: 35 mins

ingredients:

  • 2 skinless, boneless chicken breasts-cut into small pieces
  • 1/2 cup oyster sauce
  • 2 Tablespoons soy sauce
  • 1 large onion
  • 2 cloves minced garlic
  • add small amount of grated ginger- optional
  • 1/2 chopped red pepper
  • 1/2 chopped green pepper
  • 1/2 chopped yellow pepper
  • 1 cup snow peas
  • 1 cup sliced carrots
  • 1 cup sliced mushrooms- optional
  • 1 small head broccoli cut into florets
  • 3 Tablespoons vegetable oil
  • 3 Tablespoons cornstarch
  • 1 teaspoon salt- You can always skip the salt.
  • 1 teaspoon pepper
  • 1/4 cup water

instructions

  1. In  mixing bowl, combine the oyster sauce and soy sauce.  Add the cut chicken pieces. set aside.
  2. Heat the vegetable oil in a wok over high heat.  Stir in the garlic & onion.  Cook and stir-fry until the onion is soft.  Add the marinated chicken.  Stir-fry until the chicken is not pink.
  3. Pour in the 1/2 cup of water.  Add salt and pepper.  Add the broccoli, peppers, carrots and snow peas. Cover and cook until the vegetables are tender.
  4. Dissolve the 3 tablespoons cornstarch into the 1/4 cup water.  Stir into the stir-fry mixture.  It  should thicken up.  Enjoy.
