Crockpot Thai Chicken Curry

I love using my crockpot for easy meals.  Add a  nice salad and dinner is ready.
I was recently at my mom's house packing and one of her neighbors dropped by.  She handed me a bag of Thai limes. It couldn't have been more perfect timing.
That morning I told my mom, I was making Thai Chicken Curry.  I needed a lime.  So, I was pretty excited to use a Thai lime, also named Kaffir lime.
Very few people know of different ways to use a Kaffir lime. An Australian chef named David Thompson says the zest can give a dish an alluring perfume. David Thompson wrote the bible for Thai food in Australia.

The hottest Thai curry is the Thai Green curry, followed by the Thai Red curry, then the Thai Yellow curry, then the Thai Massaman curry with the mildest Thai curry being the Thai Yellow curry (although the Massaman curry is sometimes milder than a Yellow curry, depending on the recipe

Thai Curry Chicken

A lovely curry chicken dish made in a crockpot

ingredients:


  • 1-14 oz can of coconut milk
  • 2 tsp brown sugar
  • 2 Tablespoons red curry paste
  • kosher salt and pepper
  • 1-red pepper - cut into 2 inch pieces
  • 2 small yams cut into 2 inch pieces
  • 8 chicken thighs
  • 1 1/2 cups Jasmine rice
  • 1 cup frozen peas- thawed
  • 1 tsp lime zest.  I used a Thai lime
  • 1 Tablespoon soy sauce
  • Optional: Whisk 2 Tablespoons smooth peanut butter into coconut milk mixture.

instructions:


  1. In a 5- to 6-quart slow cooker, whisk together the coconut milk, curry
    paste, brown sugar, and 1/4 teaspoon each salt and pepper. Add the
    chicken and red pepper and toss to combine.
  2. Addthe sweet potatoes over the top and cook, covered, until the
    chicken is cooked through, 5 to 6 hours on low or 3 to 4 hours on high.
  3. Twenty minutes before serving, cook the rice according to package directions. Remove and discard the bones from the chicken. Gently fold in the peas, lime zest and juice, and soy sauce and cook until heated through, about 2 minutes. Cut the potatoes into smaller pieces.
  4. Serve the chicken curry with the rice

  5. This looks delcious. I have been learning to like Thai foods. So far I like it. Im not a big fan of curry but Im starting to acquire a taste for it.
    I can almost smell this recipe.
