Harvest Butternut Squash Soup

I recently invited a few of my mom's neighbors over for lunch. I prepared this nice Butternut Squash soup with a Chicken Caesar Salad and bread.  I used the pumpkin soup bowls for the yummy soup. I also made those creamy apple cider caramels I shared previously.

Harvest Butternut Squash Soup

prep time: cook time: 30 minstotal time: 30 mins
A creamy rich Butternut Squash soup with apple

ingredients:


  • 1 apple - peeled and diced
  • 2 potatoes - peeled and diced
  • 1 onion - peeled and diced
  • 2 carrots -peeled and diced
  • 64 oz chicken broth
  • 4 Tablespoons butter
  • 3 1/2 cups  peeled and diced Butternut Squash
  • salt and pepper
  • 1/4 cup apple cider

instructions:


  1. Melt butter in large pan.  Add apple, potatoes, onion, carrots and  Butternut Squash. Stir and cook for 5 minutes.
  2. Add chicken broth to cover veggies and apple.  Cook until tender.
  3. Puree mixture until smooth.  I use an immersion blender.  Feel free to add your own spices.   Sometimes I add half and half.  Enjoy!

My mom is progressing nicely.  We have high hopes of building a small house on our property, so she can be close.  She is very excited about a new house.

The pool house is almost finished.  I shall be posting some photos soon.  My husband has trim work and of course pavers for the entrance.

  3. Linda- This is so funny! I bought stuff last night to make squash soup. I love the idea of adding apple cider to it. Now I am really craving it. I probably won't make it until tomorrow though.

    I am thrilled to hear that your mom is doing so well. How wonderful of you to put a small home there for her. You are a blessing as a daughter and I know you do it without expecting anything, even thanks, in return.
