Lemon Yogurt Roll-ups

Recently my husband and I had breakfast at one of our favorites restaurant.

Katrina's is well know for great food and large portions.  Voted best of the best in
Sacramento magazine.

Katrina's is owned by a husband and wife, of course Katrina is the lovely wife and your husband is Lewis.  They can cook up a storm!

It's a very small place located off Hwy 49 in Auburn, California.

It is a small yellow house, but it can accommodate quite a few, since the also seat guests on the side and front porch.

We recently tried the Lemon Yogurt pancakes..  Lemon luscious and so light.
I decided to try to make them at home.  I think the next time, I will add club soda to make them lighter.


Use your favorite pancake mix, or  make them from scratch.

Lemon Yogurt Roll-ups

1 1/2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tbsp sugar
2 large eggs
1 cup  lemon greek yogurt
2/3 cup milk
2 tbsp lemon juice
zest from 1 lemon 

After I cook these babies, I than spread some lemon curd over the pancakes, then proceeded to roll them up.  It makes a pretty presentation with some powdered sugar.
This would be a heavenly dessert, complete with whipped cream.
Try some Meyer lemon syrup sometime.  Yumm!


Lemon Curd Recipe -this recipes comes from Ina Garten

Ingredients
3 lemons
1 1/2 cups sugar
1/4 pound unsalted butter, room temperature
4 extra-large eggs
1/2 cup lemon juice (3 to 4 lemons)
1/8 teaspoon kosher salt
Directions
Using a carrot peeler, remove the zest of 3 lemons, being careful to avoid the white pith. Put the zest in a food processor fitted with the steel blade. Add the sugar and pulse until the zest is very finely minced into the sugar.

Cream the butter and beat in the sugar and lemon mixture. Add the eggs, 1 at a time, and then add the lemon juice and salt. Mix until combined.

Pour the mixture into a 2 quart saucepan and cook over low heat until thickened (about 10 minutes), stirring constantly. The lemon curd will thicken at about 170 degrees F, or just below simmer. Remove from the heat and cool or refrigerate.

I have my favorites....There' so much to choose from.
Eggs Benedict is out of this world.  We have tried so many restaurants, none come close to Katrina's.




I have also been busy working on a few blogs.  Liz from, Infuse With Liz wanted to change to a 3 column template and some minor tweaks.  Betty's invitations for her daughter's wedding should arrive on Monday.  I designed them.  Another client Maria that sells snow cones and does face painting wants some changes to her website. She has a Wordpress site.  I am slowly trying to learn it too.
Don't forget I created a new site just about Blog Designs. A Blog Fairy, because my fellow bloggers have given me the name, Fairy Blog Mother., which that name wasn't available.

I have two doctor appointments this month for check-ups.  Let's hope all goes well.

  2. I LOVE anything lemon so these would be right up my alley! We love to go out for breakfast too. Joe also makes crepes and we usually fill them with any flavor jelly and sprinkle them with powdered sugar. Thanks for the recipe! BTW, I am not getting an e-mail for my posts?     I love this post and your picture of Lemon Yogurt Roll Ups....how scrumptious! The combination of lemon and yogurt always adds such a fresh zing to dishes! I bet this was delicious. I love little restaurants inside of homes. There are a couple on the island set off in the forest that are my very favourite places to go.
